Serrano Peppers, I Love You, But...

I should not have put an entire one in my breakfast. Alas, I had to dig it back out.  Tasty, but too hot for my breakfast of egg, good link sausage, sauteed Anaheim and Poblano peppers and rice.  Maybe if I'd used potatoes instead of rice, maybe if I'd deseeded it first instead of merely slicing it into rounds.

Removed, it left behind flavor and just enough heat.

  1. Its that rice. Very indigestible. Can't stand the stuff. (tongue in cheek).

  3. I love those peppers but a little goes a long way. Finely chopped and deseeded for eggs or guac. and cut into slivers for extra kick in chili or stews.

  4. Given a choice, I de-seed whenever I cook or pickle Chilis, not just Serranos. The seeds aren't particularly hot compared to the inner membrane, especially the part closest to the stem, and they're mostly bitter.
