One Dozen Eggs, Part 4

    Huge picture, still learning Surface's image editing options, but the guy who guessed, "Some version of 'Pomodoro,'" was right.  Behold Cajun Pomodoro:
     Last night's chicken and Andouille sausage jambalaya-ish dinner, with an egg poached in it to tame the heat a bit, and very tasty it is, too.

    Could I ask for a brand name?

    I've always used the Zatarain's box mix with a few additions but a canned mix has a lot of potential I think.

  5. The canned jambalaya mix is from Margaret Holmes and may actually have been gumbo mix; they make several kinds, as well as Southern-type vegetable mixtures. All of the ones we have tried have been very good. Wal-Mart is the only place I have seen it so far.
