Yummy... though I love onions they don't love me so I'd have to reduce the onionization somewhat. But you gave me a delicious looking variant from my usual chili-based egg breakfast.

If it provides a little inspiration, I'm happy to hear of it! This is open to lots of variation -- I like various sorts of peppers in it, from hot to sweet. Finely-diced radish makes a nice topping, too.
